Study on the Establishment of the Food Safe and Sanitaiton Control System and Its Application in Freezing Mutton Production Enterprise

Concurrence of the food safety problems caused by contamination, diseases, adulterationand prohibited article filling-in lead to the consumers’ worrying and scaring in the world.Food safety concentrates the highlight of the publics.governments and organizations indifferent countries issue a vary of measures to protect the food safety and benefit consumersin succession. In this thesis the good manufacture practice (GMP), sanitation standardoperation procedures (SSOP) and hazard analysis critical control point (HACCP) systemswere introduced according to the international mutton production and trade. Based on theessences of GMP, SSOP and HACCP a freezing mutton production enterprise was taken as anexample to establish and application of the sanitation control system for mutton production.The procedures and steps in the establishment of sanitation control system in the chilledmutton production enterprise for mutton safety were set up. The crucial control pointsincluding biological, chemical and physical hazards were analyzed and the significant hazardswere figured out in the quick frozen mutton production with prevention measures settle down.In addition the programs were worked out for supervisory control, error correction,verification and recodes maintenance.The establisher sanitation control system was applied in the chilled mutton productionenterprise in Xinjiang, the hygiene condition and mutton sanitation quality were improvedsignificantly after the establishment of the sanitation control system. As well the managementof the production, employees’hygienic awareness and the effectiveness of the enterprise werehighly improved.The cost of the mutton production was decreased. It is concluded that established HACCPmodel for the quick freezing mutton production enterprise after the practice is feasible.
