Carrot dehydration is one of important means to enhances its economical value,its necessarry to understand of carrot hot air drying characteristics,then reveal the rule of carrot drying.At the same time, provides the basis for drying process control and predictive.The topic have been studied and analyzed carrots butyl drying performance,selection temperature, wind speed, size of carrots butyl, and material thickness as factor experiment, In the drying dynamics test, as carrots butyl sensory quality as basis to find the best drying temperature range.namely in between60℃to70℃.Research shows that the more drying temperature and wind speed, the more drying rate,material thickness and carrot butyl gets smaller,the drying rate be faster.In drying process the drying rate present the trend of rapid decline and constant speed stage is relatively short.In the technology research of carrots butyl,the carrot butyl dry process parameters analysis by orthogonal experiment.Taking recovery ratio of water as index of influence factors and the optimal process,in this process is the besttemperature is65℃,wind speed is2.5m/s, carrot butyl is5×5×5mm,material thickness is45mm.Taking water activity as index of influence factors and the optimal process,in this process is the best:temperature is65℃,wind speed is2.5m/s, carrot butyl is3×3×3mm,material thickness is65mm.Taking survival rate of Vc as index of influence factors and the optimal process,in this process is the best:temperature is60℃,wind speed is2.5m/s, carrot butyl is4×4×4mm,material thickness is55mm.Taking dry products qualityas index of influence factors and the optimal process,in this process is the best:temperature is65℃,wind speed is2.5m/s, carrot butyl is5×5×5mm,material thickness is55mm.Based on the above of recovery ratio of water,water activity survival rate of Vc anddry products quality. Obtain the best technological condition for:temperature is65℃, wind speed is2.5m/s, carrot butyl is5X5X5mm,material thickness is55mm.
