In recent years,with the continuous development of the food industry, the beverage market has changed remarkably. Tea beverage has gained favorable reputation from the mass of customers with features of refreshment, mellow taste as well as health care, and it has developed rapidly to become one of growing drinks with highest speed in relatively short time. While the food industry keeps prospering,accidents concerning food safety occur frequently,which cause great losses to life safety of consumers and national treasures.Although Overall quality in tea beverage is secure, a quantity of safety problems keep arising because of the differences in manufacturers capital,equipments,technology, management and other conditions as well and of the lack of integrated production and management standards along with the imperfect laws and regulations in tea beverage quality supervision. In this paper,several outstanding concerns will be brought out through analysing the questionnaire as to tea beverage quality safety, which include the nonstandardized use of food additives, over-standard of heavy metal and microorganisms,and nonstandardized products labels and marks,and these facts in turn indicate the consumers’ dissatisfaction with tea beverage safety. Then the paper makes an analysis of the potential quality problems in the entire production,transportation and saleing in the order of production process and determines the key factors affecting the tea beverage safety such as tea and water quality control, the safe use and control of food additives,cleaning and maintenance of machinery equipment,quality safety control of packaging materials as well as the completion in food safety laws and regulations. Finally,the paper puts forward the corresponding solutions and measures and applies HACCP theory to make HACCP plans so as to instructthe tea beverage production. Through the detailed exploration in the paper,practical methods and measures are expected to be brought up to improve the quality of tea beverage products.
