Application Problems and Construction of HACCP System for Exported Manufacturers of Frozen Convenience Wheaten Food in Jiangsu

Quick-frozen Convenient wheaten foods such as quick-frozen steamed stuffed bun. dumpings, spring-rolls are major export product in our province and warmly praised by foreign customers. The sanitation and food safety of quick-frozen Convenient wheaten foods is very significant for the variety of raw materials, minor ingredients and processes. Therefore, the HACCP systerm was enforced to implement for quick-frozen Convenient wheaten food plant that produce meat or aquatic product in our country. This article was aimed to analyze the actual condition of the HACCP systerm in quick-frozen Convenient wheaten food plant in Jiangsu province, and expound the necessity of establishing this systerm. This article, based on the supervision experience of export frozen convenience food plant in Jiangsu enterprises, sumed up all kinds of problems of establishment and implementation of HACCP systems, and deeply analysed the existing problems to help companies avoid misunderstanding and common problems in application process. In this article, to help businesses improve the effectiveness of the application of HACCP system, frozen pork dumplings steamed was used to analyzed and discussed that how to establish and implement HACCP system scientific and efficiently.This study aimed to focus on how to improve the effectiveness of application of export frozen food industry of HACCP system in Jiangsu province. Macro and specific examples and data that origined from different export frozen convenience companies was only cited for argumentation and demonstration.Main results of this study are as following:1. We studied about problems of the exported frozen convenience food company HACCP system in application in Jiangsu Province. The study include problems in the process of building HACCP system such as lack of specificity and scientific basis for hazard analysis, inadequately hazard analysis. CCP incorrectly identify, CL values unreasonably determined and not strictly documentation and problems in the process of HACCP system implementation such as unreasonably monitoring procedures, not-appropriately corrective measures and can not validate and verify the incomplete system. All of the studies are contribute to correct erroneous understanding of HACCP system and avoid similar problems for the general export frozen convenience food manufacturers.2. In this article, the export frozen steamed pork buns was used as the example, focus on the the implementation of hazard analysis in establishment of HACCP system, institution in HACCP plan and recognition of HACCP system, to provied a set of method that of scientific establishment and effective implementation of HACCP system for enterprise.This article has the real direction to help plants to better break up the foreign technical barriers and promote our quick-frozen Convenient wheaten foods industry developing healthy and stably.
