Hazard Analysis and Critical Control Point (HACCP) is a quality assurance system of ensuring food satety which is scientific, simple and practical in the international flourishing food industry in recent years. It has obtained obvious effects in the process of preventing and control food from raw material production, processing, storage and marketing, especially in the process it can drop risks to minimum. It has been recognized by anthoritative international organizations and multi-national food inspection department and has become a "green pass" of international free trade.A management system for food safety includes HACCP, GMP and SSOP. GMP and SSOP are the basic requirements for HACCP. An effeetive HACCP plan also should involved GMP and SSOP. Since HACCP is not the whole of food safety assuranee system, we can not eliminate the risk of food safety only using GMP and SSOP. When the three systems are combined together, a preventive food safety assurance system can be established.Our present study was focused on the application of HACCP in the production of ganoderan and ganoderan powder. Results were as followed:1. HACCP is not a food safety management system without any riske. A complete food safety management system should be supported by basic GMP and SSOP, and HAPPC should play a key role in the prediction of food safety. Therefore, HACCP is essential in the process of factory design and daily quality control.2. The products were described according to the production of ganoderan and ganoderan powder. The flow sheets of production of ganoderan and ganoderan powder were drawed while the hazard analysis was carried out in the next step.3. The critical control points were identified to be the purchase and checking of raw materials, purchase and checking of package materials and ultramicro pulverization. 4. The critical limits were studied and the HACCP in the process of ganoderan and ganoderan powder was established. The critical limits of the purchase and checking of raw materials were the results of pesticide residue should be negative, the total numbers of colony should be lower than 2.5×103, and the coli group should be lower than 30. The critical limits of purchase and checking of package materials were the total numbers of colony should be lower than 2.5×103, and the coli group should be lower than 30. The critical limits of ultramicro pulverization were the processing time of lucid ganoderma should be over 30 min and the time of spore powder should be over 40 min.5. The vetification of HACCP was carried out in the practice. All the results indicated that the eatablished HACCP could make sence in manufacturing and enhance the safety of ganoderan and ganoderan powder.
