Survey of the current status of the school canteen research is concentrated in urban areas, canteen, the cafeteria health status of rural schools reported less comprehensive system for the the Midwest rural school cafeteria health status of the research has not been reported; oriented cafeteria health qualitative interview study of the managers have not been reported. The research for a better understanding the rural school cafeteria current situation of health management and the problems and difficulties, understand the current rural school canteen buildings, facilities health status of central and western rural schools. Objective To understand the the cafeteria health management leadership at all levels of the rural the school canteen Health Management status quo view, the cafeteria health main problems and to improve the health status of the canteen; school school cafeteria health needs and the relevant government departments work situation; understand in western rural school cafeteria building, basic sanitation status quo, to provide a basis for the future development of health management regulations for rural school cafeteria, so as to further improve the the Midwest rural school canteen management level, improve cafeteria health conditions, to protect the majority of the student body in the school health. Method for the study of the central and western rural schools, stratified sampling method, according to the provincial and municipal economic conditions, rainfall distribution and geographic location into account, in the central and western regions of each extract three provinces, and then be extracted from each provinces (municipalities or autonomous regions) choose two County (a suburban counties is the capital city of the county, the other in the middle level of the provincial economic development); each county to extract two elementary schools, two middle schools, two high schools, one of which the school is located in the county, and another school is located in the township. Visited a total of 72 rural schools in 12 county-level cities in six central and western provinces. Leadership interviews include: the school cafeteria and health management situation and existing problems and causes; improve the the cafeteria health status of approach and recommendations. Site to observe the school's cafeteria building, sanitation and environmental health conditions, to design their own questionnaire to record observations. Interviews timely transcription, finishing as text data, and then under the thematic framework to determine the analysis theme, With Maxqda2.0 software, data coding, summarized analysis of the topic. Results 1 school leadership interviews: the establishment of a canteen needs of rural schools; most school leaders tend to the cafeteria by the school to operate independently, that schools operate independently advantages; school leaders that run canteens must hold health permits and practitioners health certificate; school leaders lack the knowledge and training of food-related health and related the cafeteria health management regulations awareness is not high, the leadership needs to accept the school cafeteria health management knowledge training; school cafeteria main problems is the management level is not high, certificate and food procurement system is imperfect lower the quality of employees, the student nutrition unreasonable; Most leaders believe that the existing the cafeteria health management approach hardware requirements higher than rural schools on their own capabilities. Education and competent leadership considered whether to establish a rural school cafeteria rural school students in the school dining needs; school cafeteria business model, education leaders that schools operate independently, but also can not deny the advantages and strengths of the contractual management; Educational Leadership reflect the cafeteria health area licensees rate is low, the minimum is only about 30%; compared with health permits, employing a higher rate of health card holders; cafeteria health regulations awareness; education departments often organized for school leadership training in food hygiene knowledge; recommend the purposes of management at different levels of the rural school cafeteria, the cafeteria building into the school's overall planning, good the canteen preventive hygiene review, to ensure that the location and layout of the new construction and renovation of canteen hygiene standards primary and secondary school students; combination of local eating habits of life, the development of rational nutrition guide; recommended the development of canteen management approach for rural areas. The findings of the underlying hardware facilities and employees in health habits: more than half of the rural school cafeteria and external environment is poor: 55.74% the canteen internal layout unreasonable. Canteen basic hardware facilities imperfect: only 47.54% of the canteen with three anti facilities. Raw food materials storage site better health: 83.61% of the school cafeteria with a specialized food materials storage site, 73.77% of the food storage site hygiene. The canteen employees personal hygiene difference: less than 30% of the employees to regulate the wearing of masks and hats. Conclusion rural the school canteen Health status quo unsatisfactory. The main problems of the rural school cafeteria is the lower management level, the lower the quality of employees, hardware facilities imperfect, irrational student nutrition. Proposed the relevant government departments to increase the publicity of the school cafeteria Health regulations, regularly organizes training for cafeteria managers to raise awareness of the law and management level of the canteen managers: to increase the training of employees, improve health and sense of responsibility of practitioners ; increase funding to the school cafeteria, and the establishment of a canteen special funds to actively improve the condition of the facilities of the basic health of the rural school cafeteria hardware; health supervision departments on a regular supervision and guidance of the school cafeteria work, and joint-related departments jointly improve the school cafeteria health job.
